Peybonhomme's Blanc de Noir, I would argue, might be the coolest wine coming out of Bordeaux right now.  Yes, it's a white wine...or perhaps more of an ultra-light rosé.  That sultry pink hue?  A result of it being 100% Cabernet Sauvignon.  Yes, a white wine made of Cabernet Sauvignon.  Sixth generation owner/operator of Peybonhomme-Les Tours, Rachel Hubert has been making some of Bordeaux's most honest and forward-thinking wines for a while now, but, with this softly sexy, textured, subtly mineral/herbaceous/salty/cheesy stunner, she's really blazing a whole new path in a region that's hardly thought of as experimental.
