COS's Bastonaca is a classic Cerasuolo made of fruit from the sandy/clay/iron-rich vineyard of the same name. It's fermented in concrete, then spends two years in barrel and and additional year back in concrete, allowing all of that deep, earthy, iron/leathery character to emerge. It combines the lightness of Cerasuolo with a depth and seriousness that might surprise you.
