Caveau de Bacchus' ultra-traditional Jura wines are some truly underappreciated gems, and this 2018 Trousseau Cuvee des Geologues Poussot is a stunning example of what well-made Trousseau taste like. The dry and brooding nose walks hand in hand with the medium-bodied, nervy palate seasoned with plenty of dark fruit and traces of wet stone, dried spices. While elegant and silky, the Poussot has a bit more energy and voluptuousness than the winery's entry-level Trousseau, with a long, savory finish.
